Description
This fragrant, tender orange cake comes from my husband Saman's grandmother, Sidi Joon. It’s a well-loved family recipe that also served as one of the components of our winning saffron orange trifle in Episode 3 of Hallmark Channel's Baked with Love: Holiday!
Ingredients

- 2 large eggs + 1 egg yolk
- 9 tablespoons (125 g) unsalted butter, room temperature
- 1 cup (125 g) powdered sugar
- 1 cup (125 g) all-purpose flour
- 1 ½ teaspoon baking powder
- ¾ teaspoon vanilla extract
- ¾ teaspoon orange zest (from ~1 orange)
- 75 ml (⅓ cup) fresh orange juice
- Pinch of salt
Instructions
- Preheat oven to 400°F (205°C). Grease and flour one 8-inch round cake pan and/or line the bottom with parchment.
- Zest first, then juice the orange. Set juice aside and reserve zest.
- In a large bowl, cream the butter until smooth. Gradually beat in the powdered sugar until pale and fluffy.
- Add eggs: beat in the 2 eggs and 1 yolk one at a time on low, just until incorporated. Avoid overmixing.
- In a separate bowl, sift together the flour, baking powder, and salt.
- Fold dry ingredients into the wet batter gently with a spatula.
- Add the orange zest, orange juice, and vanilla; fold gently until fully combined.
- Scrape batter into the prepared pan. Tap lightly on the counter to release air bubbles.
- Bake at 400°F for 7 minutes, then (without opening the oven) reduce to 375°F and bake 22-25 minutes more, or until a toothpick inserted in the center comes out clean.
- Let cool in the pan for about 10 minutes before turning out the cake layer to finish cooling on a wire rack.
- If desired, dust with powdered sugar before serving!
